Ingredients
[serves 4 | makes aprox 20 small meatballs]
- 500g pork mince
- 3 tbsp red curry paste
- Bunch fresh coriander, leaves and stalk
- 2 pinch salt
- 1tsp sugar
- 1 Lebanese cucumber
- 1 stick rice noodles,
- Sweet chilli sauce
- Sesame seeds (for sprinkling)
- 1 Lime, cut in wedges
Method
- In a mixing bowl, combine pork, curry paste, chopped coriander, salt and sugar together
- Using oiled hands or an oiled spoon, roll mixture into small balls about 2cm in diameter
- Add oil to a hot pan, on medium heat cook balls on one side until a golden crust forms. Flip once achieved and continue cooking until cooked right through. Remove and rest.
- Prepare rice noodles, herbs and thinly sliced cucumber in a bowl. Add meatballs.
- Sprinkle sesame seeds on top and enjoy with sweet chilli sauce and fresh lime juice
