Ingredients
[Serves 4]
- 1 pack Spaghetti
- 1 Lemons
- 3 cloves garlic
- 100g Butter
- 2 LDL Burrata
- 1 bunch Asparagus
- 60g Parmigiano Reggiano
- Basil for garnish
- EVOO
- Salt & Pepper
Method
- Cook pasta as per packet instructions in boiling salted water
- In a pan, melt butter over medium heat and add in chopped asparagus, the zest of one lemon and crushed garlic
- Add cooked pasta and a dash of pasta water and stir until combined.
- Grate in cheese to taste
- Plate pasta in a shallow bowl.
- Drain and pat dry burrata and place on top of pasta.
- Garnish with fresh basil, cracked pepper and a light drizzle of EVOO (some more cheese too if you’re anything like me!)
Display Serve- large shallow, ceramic bowl
